The Gingerbread Competition is back and this year, we are thrilled to partner with The Gingerbread City® by the Museum of Architecture

Now in its ninth year, The Gingerbread City® is a one-of-a-kind festive exhibition where imagination meets innovation: architects, designers and bakers transform gingerbread and sweets into an enchanting miniature city.

Together with The Gingerbread City®, we invite you to make your own gingerbread creations for the theme of The Playful City to be showcased at The Cake & Bake Show 2025.  From towering sky scrapers to outdoor playspaces, and everything in between, this is your chance to put your best gingerbread making skills to the test!

Important information:

Judging Criteria:

The competition will be judged byThe Gingerbread City® on the following criteria:

  • Originality and creativity of design
  • Overall visual impact
  • Skills and execution of technique
  • Interpretation of the theme The Playful City
  • All entries must fit within the modular plinth system: Small plot: 30cm x 30cm base (ideally no more than 1cm thick) Large plot: 60cm x 60cm base (ideally no more than 1cm thick)
  • There are no height restrictions
  • Entries will not be judged on taste, they are solely judged on appearance
  • Any edible medium may be used and wires, tape, ribbon and stamen are allowed
  • Internal supports and dummies are allowed
  • If you would like your structure illuminated if it is chosen to move to The Gingerbread City®, you need to leave a hole in the base under your structure.

Dates & Times:

Competition entries close on Friday 31st October.

You will be sent an information pack via email once you have entered. Please allow a few days for this to come through.

Entries must be dropped off at The Cake & Bake Show section of the Ideal Home Show Christmas at Olympia London, on Tuesday 25th November between 4-6pm.

Your entry must then stay on display at the event until 5pm on Sunday 30th November.

Winners will be announced during a live award ceremony on Saturday 29 November.

All competition pieces must ONLY be removed between 5pm-6pm on Sunday 30th November and strictly NOT before. The organisers reserve the right to remove and dispose of any competition pieces not collected during this time.

Entry Requirements

Looking Tasty 

Internal structural support systems made out of non-edible materials are encouraged, especially in larger structures. Please just make sure any structural supports are covered and the structure looks entirely edible from the outside. All sides of your gingerbread structure will be visible, so please keep this in mind and make sure all areas are designed including landscaping around your structure and the rest of the top of the base. 

Buildings should be primarily constructed from gingerbread, with edible detailing made from sweets, edible ingredients and icing (please do not use nuts for allergy reasons). Landscapes can be made mostly of candy and there are many ways of making trees, rock-scapes, and lakes. Melted hard candy can make good windows and water features – just crush them up and bake them with the gingerbread to seal them in and make sure they are not too thin so that they don’t melt away with time. Add the crushed boiled sweets towards the end of the bake and check regularly to ensure they don’t burn. Isomalt also makes good window and water features, just please use necessary precautions such as safety gloves as this can get very hot and scald you (do not let children work with isomalt). We advise not to use any ingredients that might go mouldy or break down fast, such as jello, chocolate or cotton candy. Do not stack gingerbread on top of gingerbread to create height without internal supports as it will collapse over time. Likewise, do not expect single sheets of gingerbread to stand alone vertically without substantial support.

Built to last

Structural strength will be important. The recipe provided will create a mix that is structurally strong. The recipe for the walls should create hard biscuits, and not be soft or cake-like. Avoid using baking soda in the recipe as this can make the biscuits softer, lighter and more likely to absorb moisture. Three-dimensional shapes could perhaps be created by shaping biscuit mix around a mould before baking like a metal taco holder for example.

This is your time to experiment and try new things!

To develop the unique character of the City, all designs should be your own design and not plagiarised from elsewhere. We look forward to seeing some truly experimental structures!
